Yamaguchi Iwakuni Zushi (The Approach to Kintaikyo Bridge Hirasei)

Iwakuni Zushi is a type of pressed sushi made in Iwakuni City, Yamaguchi Prefecture. Also known as "Tonosama Sushi" or "Sushi of a Feudal Master," this sushi is said to have been thought up at Iwakuni Castle as a preserved meal for battle. The sushi rice is seperated with ingredients such as lotus root or crushed egg, then many vegetables are layered on top before it is placed inside a wooden frame. After this, someone stands on the wooden frame to press the sushi. A restaurant called "Hirasei" provides guests with this traditional local cuisine as well as a lovely view of Iwakuni Castle and Kintaikyo Bridge.
