Tokushima Prefecture's Kamikatsu is making a name for itself by aiming towards being Japan's first zero-waste town. Sustainability isn't just a buzzword here, it's an ethos and a way of living that sees residents transport their own waste for sorting into 13 types and 45 categories. In 2000, sustainability became a necessity in Kamikatsu when new emissions laws forced the shutdown of two local incinerators. Soon after, in 2003, the town declared its goal of becoming a zero-waste town by 2020, and in 2020 it established its zero-waste center. Now, the town is seen as a pioneer in sustainable living thanks to the commitment of the local community.

RISE & WIN Brewing Co. makes awesome, tasty beer but also respects the environment, making the zero-waste oasis of Kamikatsu an ideal home base. With its sustainable brewery and unique circulation method of utilizing waste called "reRise."

RISE & WIN Brewing Co. was set up by a Tokushima-native, Tatsuya Tanaka, who wanted to do something to help Kamikatsu keep its vitality in the face of the threat of population decline that could have undermined the town's efforts in renewable energy. Brewing craft beer—a booming trend in Tokyo—seemed a great way to help more people around the world learn about Kamikatsu whilst give the town's younger generation something to be proud of.

The RISE & WIN Brewing Co. BBQ & General Store is a must-visit for both craft beer fans and those looking to see real sustainability in action. You'll find in addition to the hearty ales on offer that are admired for their great taste, the actual space here has been renovated using recycled materials from old buildings around the town itself. You can't really get more sustainable than that. Try the brewery's Kamikatz Pale Ale or the IPA if you're looking for something a little hoppier. The brewery is located in a picturesque setting and already has a legion of Instagram fans.
